  • 2 1/4 lbs (1kg) floury potatoes - such as Maris Piper or red-skinned Rooster potatoes
  • 1/2 cup (120g) lard or duck fat
  • 1 tsp Maldon salt
  • 1 tbsp fresh thyme leaves

Method

10 steps
  1. Preheat the oven to 220 °c or 425f.
  2. Peel and chop the potatoes into chunky pieces about two inches or roughly five centimetres across.
  3. Place the potatoes in a pan and cover with cold water.
  4. Bring to the boil, then turn down the heat and simmer for ten to eleven minutes until softened at the edges.
  5. Add 120 grams or half a cup of lard to a large roasting tin and place in the oven for 10 minutes until the oil is shimmering and hot.
  6. Drain the potatoes using a colander, shake to ruffle up the edges.
  7. Carefully place the potatoes into the hot fat using tongs.
  8. Turn the potatoes over once to coat them in the fat.
  9. Place the roasting tin in the oven and cook for 30 to 35 minutes, turning once or twice in the last 15 minutes, until golden brown and crispy.
  10. Remove from the oven, transfer the potatoes to a serving dish, and top with a sprinkling of Maldon salt, fresh thyme leaves.
