- 1 large yellow onion, cut into ¼-inch slices
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter, melted
- 1 tablespoon French onion dip seasoning
- Kosher salt, to taste
- Ground black pepper, to taste
- 1½ pounds baby red potatoes, quartered
- ¼ cup olive oil
- 1 tablespoon kosher salt
- 1 teaspoon finely ground black pepper
- 4 hamburger patties, 6 ounces each, made with an 80/20 ground beef blend
- French onion dip seasoning, as needed
- 4 brioche hamburger buns, sliced
- 4 tablespoons unsalted butter, softened
- 4 slices Gruyère cheese
- 4 slices Swiss cheese
Method
18 steps- Prepare the grill for direct cooking at about 450°F.
- Place a plancha or Weber Works griddle on the right side of the grill and allow it to preheat.
- In a mixing bowl, combine the olive oil, melted butter, and French onion dip seasoning for the onions. Add the sliced onions and toss to coat. Season lightly with salt and pepper.
- In a separate bowl, toss the quartered potatoes with the olive oil, salt, and pepper.
- Season both sides of the hamburger patties generously with French onion dip seasoning.
- Spread the softened butter on the cut sides of the brioche buns.
- Bring the prepared ingredients to the grill.
- Brush the preheated grill grates clean.
- Add the onions to one area of the preheated plancha or griddle, leaving room for the potatoes. Cook for 20–25 minutes, stirring occasionally, until caramelized.
- Add the potatoes to the open area of the plancha or griddle. Cook for 10–15 minutes, stirring occasionally, until tender.
- Grill the hamburger patties over direct medium-high heat, about 450–500°F, with the lid closed as much as possible. Cook for 5 minutes.
- Flip the patties and cook for another 4 minutes.
- Use a thermometer to check the burgers for doneness.
- Top each burger with one slice of Gruyère and one slice of Swiss cheese. Place the buns cut side down over direct heat.
- Cook for about 1 minute, until the cheese melts and the buns are toasted.
- Place a cheeseburger on each bottom bun.
- Top with caramelized onions and the top bun.
- Serve warm with the grilled baby red potatoes.
