- 2 tsp baking powder
- 1/2 cup (70 g) raisins soaked in boiling water for 10 minutes
- 1 apple
- 1 tbsp butter
- 2 tbsp sugar
- 1/2 tsp cinnamon
- 2/3 cup (70 g) chopped walnuts
- 1 cup (250 g) cottage cheese
- 1 egg
- 2 tbsp sugar
- 1 tsp vanilla sugar
- 2 tbsp cornstarch
Method
- Line a pie pan with damp parchment paper and spray with vegetable oil.
- Mix 3 eggs, yogurt, sugar, salt, vanilla sugar, vegetable oil, and lemon zest.
- Add flour and baking powder in parts and mix to form dough.
- Spread the dough evenly in the prepared pan.
- Soak raisins in boiling water for 10 minutes.
- Peel and slice the apple.
- Melt butter, add sugar and cinnamon, then add soaked raisins and apple slices; spread this mixture on the dough.
- Blend cottage cheese, 1 egg, sugar, vanilla sugar, and cornstarch with an immersion blender.
- Spread the cottage cheese mixture over the apple layer using a pastry bag.
- Sprinkle chopped walnuts on top.
- Bake for 50–60 minutes at 356°F (180°C).
