Ingredients
- 2 ripe bananas
- 2 eggs
- 2 tbsp cocoa powder
- Pinch of salt
- 1 tsp baking powder
- 1 tbsp pumpkin seeds
- 2 tbsp walnuts, chopped
- 5 tbsp Greek yogurt or sour cream
- 2 tbsp raisins
- 1 apple
- 1 tsp ground cinnamon
- 1 cup rolled oats
- 3 oz sugar-free dark chocolate
- 3 tbsp hot milk
- Walnuts
Method
- Mash the bananas into a smooth puree.
- Add the eggs and whisk until combined.
- Add the cocoa powder, salt, and baking powder. Mix well.
- Stir in the pumpkin seeds, chopped walnuts, and Greek yogurt.
- Soak the raisins in boiling water for 10 minutes.
- Toast the rolled oats in a dry skillet over medium heat for 4–5 minutes, then let them cool.
- Peel and finely grate the apple.
- Add the grated apple, drained raisins, and cinnamon to the batter.
- Add the toasted oats and mix until fully combined.
- Transfer the batter to a prepared baking pan and spread evenly.
- Bake at 180°C (356°F) for 30–35 minutes.
- Allow the brownie to cool completely.
- Pour the hot milk over the dark chocolate.
- Stir until smooth. If needed, microwave for 20–30 seconds and stir again.
- Spread the topping evenly over the cooled brownie.
- Sprinkle with walnuts.
- Refrigerate until the chocolate topping is fully set.
- Slice into portions and serve.
