  • 300 g Chicken thigh
  • 0.5 tsp Salt
  • 0.5 tsp Sugar
  • 0.5 tbsp Soy sauce
  • 1 tsp Sake
  • 1 tsp Oyster sauce
  • 0.5 tsp Garlic
  • 0.5 tsp Ginger
  • 0.25 tsp Toban Djan
  • 1 piece Egg (50-55g without the shell)
  • 1.5 tbsp All purpose flour (20g)
  • some Corn starch / flour
  • some Black pepper
  • 2 tbsp Neutral oil

Method

7 steps
  1. Marinate chicken thighs with salt, sugar, soy sauce, sake, oyster sauce, garlic, ginger, toban djan, and black pepper for at least 1 minute.
  2. Add egg and mix well.
  3. Coat the chicken with all purpose flour and corn starch.
  4. Heat neutral oil in a pan over medium heat.
  5. Slide the meat into the oil, shaking the pan occasionally to prevent sticking.
  6. Cook until browned on both sides, then remove from heat.
  7. Let the chicken rest for 3 minutes on paper towel before serving.
