  • 1/4 cup kimchi brine
  • 1/3 cup chopped aged kimchi
  • 1/2 pound pork shoulder or pork belly, sliced
  • 1 onion, sliced
  • 2 green onions, chopped
  • 1 sheet dried seaweed, sliced
  • 4 cups cold water
  • 1 teaspoon salt
  • 2 teaspoon sugar
  • 1 tablespoon red pepper paste (gochujang)
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon honey
  • 1/2 cup tofu, sliced
  • Optional: dried anchovies or anchovy stock for broth

Method

6 steps
  1. Add 4 cups of cold water to a pot and bring to a boil.
  2. Add dried anchovies or anchovy stock if available for broth flavor.
  3. Add sliced pork, sliced onion, chopped green onions, sliced dried seaweed, salt, sugar, red pepper paste, sesame oil, soy sauce, and honey to the boiling water.
  4. Cook for about 20 minutes until the pork is tender.
  5. Add sliced tofu and cook for an additional 10 minutes.
  6. Adjust seasoning as needed and serve hot.
