Ingredients
15 ingredients- 1/4 cup kimchi brine
- 1/3 cup chopped aged kimchi
- 1/2 pound pork shoulder or pork belly, sliced
- 1 onion, sliced
- 2 green onions, chopped
- 1 sheet dried seaweed, sliced
- 4 cups cold water
- 1 teaspoon salt
- 2 teaspoon sugar
- 1 tablespoon red pepper paste (gochujang)
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
- 1 teaspoon honey
- 1/2 cup tofu, sliced
- Optional: dried anchovies or anchovy stock for broth
Method
6 steps- Add 4 cups of cold water to a pot and bring to a boil.
- Add dried anchovies or anchovy stock if available for broth flavor.
- Add sliced pork, sliced onion, chopped green onions, sliced dried seaweed, salt, sugar, red pepper paste, sesame oil, soy sauce, and honey to the boiling water.
- Cook for about 20 minutes until the pork is tender.
- Add sliced tofu and cook for an additional 10 minutes.
- Adjust seasoning as needed and serve hot.

- Use low to medium heat to prevent boiling over.
- Add extra water or broth if you prefer a thinner stew.
