Crispy Oat Cups without Sugar and Flour

Ingredients

  • 170 ml water
  • 50 ml butter (Can be replaced with coconut oil, vegan margarine, or almond paste)
  • 1 pinch of salt
  • 90 g instant oats
  • 2 pieces of eggs
  • 150 g ricotta + Greek yogurt (For filling 1 and 3)
  • 1 tsp starch (For filling 1 and 3)
  • 30 g cocoa powder (For filling 2)
  • 1 tbsp peanut butter (For filling 2)
  • 1 piece of banana (For filling 2)
  • 100 g blueberries (For filling 3)
  • Stevia to taste (For fillings 1 and 3)

Method

  1. Preheat the oven to 180 degrees.
  2. Mix all ingredients for the dough in a bowl.
  3. Fill small molds with the mixture.
  4. Bake for 20 minutes until the cups are crispy.
  5. For the fillings, mix ricotta and Greek yogurt, add lemon juice and zest or cocoa powder and peanut butter for filling 2 or blueberries for filling 3.
  6. Fill the prepared fillings into the cooled oat cups.
