  • 500 g ground beef
  • 1 large red onion, finely chopped
  • 3 garlic cloves, chopped
  • 1 tbsp soy sauce
  • 50 ml water
  • 1 tsp Mexican oregano powder
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp black pepper, freshly cracked
  • 1/4 tsp white pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp MSG
  • 200 ml evaporated milk
  • 2 American cheese slices
  • 50 g mature cheddar cheese
  • 1/2 onion, chopped
  • 1 green Sano chili, chopped
  • Juice of 2 limes
  • Zest of 1 lime
  • 1 ripe avocado
  • 2 Roma tomatoes, chopped
  • 2 tbsp fresh coriander, chopped
  • 1 tbsp lime juice
  • 1/2 tsp Mexican oregano
  • Salt to taste
  • Juice of 1 lime
  • 1 fresh jalapeno, sliced
  • 100 g black olives, sliced
  • Tortilla chips
  • Sour cream
  • Pico de gallo (chopped onion, Roma tomatoes, jalapenos, cilantro, lime juice, salt)

Method

6 steps
  1. Prepare the beef by chopping onions and garlic, then cook in a hot pan until browned, breaking it down with a masher, and seasoning with soy sauce, water, Mexican oregano, and other spices. Cook until juicy and flavorful.
  2. Make cheese sauce by simmering evaporated milk, adding American cheese slices and mature cheddar, seasoning with salt, and cooking until thick.
  3. Prepare guacamole by blending avocado flesh with onion paste, lime juice, lime zest, cilantro, and salt until smooth, then mixing with chopped onion, tomato, cilantro, and seasoning.
  4. Make pico de gallo by chopping onion, Roma tomatoes, jalapenos, cilantro, and mixing with lime juice and salt.
  5. Assemble the nachos by layering tortilla chips on a plate, topping with cheese sauce, cooked beef, tomatoes, olives, jalapenos, scallions, pico de gallo, and cheese. Repeat layers as desired.
  6. Garnish with sour cream, additional jalapenos, lime wedges, and hot sauce before serving.
