9 ingredients- 110 g unsalted butter, melted
- 150 g light brown sugar
- 115 g granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 180 g plain flour
- 1/2 teaspoon bicarbonate of soda
- 1/2 teaspoon salt
- 200 g chocolate chips
Method
10 steps- Preheat the oven to 180°C, or 160°C fan, and line a baking tray with parchment paper.
- Whisk together the melted butter, light brown sugar and granulated sugar until smooth and fully combined.
- Add the egg and vanilla extract and whisk until evenly incorporated.
- Add the plain flour, bicarbonate of soda and salt.
- Fold gently until a soft cookie dough forms, taking care not to overmix.
- Fold the chocolate chips evenly through the dough.
- Scoop approximately 1 tablespoon of dough for each cookie and roll into small balls.
- Arrange the cookie dough balls on the prepared tray, leaving space between them to spread.
- Bake for approximately 5 minutes, until the edges are lightly golden and the centres still look soft.
- Leave the cookies on the tray for several minutes to firm up before transferring them to a wire rack.
