  • 1/2 cup (120 g) unsalted softened butter
  • 1/4 cup (50 g) granulated sugar
  • 3/4 cup (150 g) light brown sugar
  • 1 large egg
  • 1 tsp vanilla
  • 2 cups + 1 tbsp (250 g) all-purpose flour
  • 1/4 cup (30 g) cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup (100 g) dark chocolate chips
  • 3 1/2 tbsp (50 g) unsalted butter (for crunchy layer)
  • 1/2 cup (50 g) icing sugar (for crunchy layer)
  • 2 large egg whites (about 60 g) (for crunchy layer)
  • 1/3 cup (50 g) flour (for crunchy layer)
  • 1/2 tsp vanilla (for crunchy layer)
  • Pinch of salt (for crunchy layer)
  • 3/4 cup + 2 tbsp (150 g) dark chocolate (for chocolate topping)
  • 2 1/2 tbsp (25 g) vegetable oil (for chocolate topping)

Method

  1. Mix butter, granulated sugar, and brown sugar until creamy.
  2. Add egg and vanilla, mix well.
  3. Combine flour, cocoa powder, baking soda, baking powder, and salt; gradually add to wet ingredients.
  4. Fold in dark chocolate chips.
  5. Chill cookie dough in fridge for about an hour.
  6. Preheat oven to 180°C.
  7. Bake cookies for 13-15 minutes.
  8. For crunchy layer, mix butter, icing sugar, egg whites, flour, vanilla, and salt.
  9. Bake crunchy layer at 180°C for 10 minutes.
  10. Melt dark chocolate with vegetable oil for topping.
  11. Add crunchy layer and chocolate topping to cookies as desired.

  • Chill the cookie dough for about 1 hour before baking.
  • Do not overbake the cookies; they will continue to firm as they cool.
  • Bake the crunchy layer separately before adding it to the cookies.
