  • 120 g butter, softened
  • 80 g icing sugar
  • 10 g vanilla sugar
  • 1 pinch salt
  • 1 egg
  • 250 g plain flour
  • 1 tsp baking powder
  • 120 g sweetened condensed milk

Method

16 steps
  1. Beat the softened butter, icing sugar, vanilla sugar and salt until pale and fluffy.
  2. Add the egg and beat briefly until combined.
  3. Mix the flour with the baking powder.
  4. Add the flour mixture gradually and mix until a soft, non-sticky dough forms.
  5. Divide the dough into walnut-sized balls.
  6. Freeze the dough balls for 15 minutes.
  7. Preheat the oven to 180°C (350°F).
  8. Cut each chilled ball in half.
  9. Shape each half into a walnut-shell form.
  10. Use a wooden skewer or the blunt side of a knife to mark a walnut pattern.
  11. Place the shaped cookies on a lined baking tray.
  12. Bake for 15–20 minutes, until lightly golden.
  13. Leave the cookies to cool completely.
  14. Spread sweetened condensed milk over the flat side of one cookie half.
  15. Sandwich with a matching half.
  16. Allow the filling to settle before serving.
