Shrimp and Pepper Stir Fry

Ingredients
- 3 cloves of garlic
- 3 slices of ginger
- 3 green onions
- 1/2 onion
- 1 bell pepper (red or green)
- peeled and deveined shrimp
- salt

- corn starch
- water
- sesame oil
- oil for cooking
- rice wine (optional)
- oyster sauce
- soy sauce
- dark soy sauce
- crushed black pepper
Method

Mince the garlic.

Prepare three slices of ginger.

Cut the green onions into 2 in sections, keeping the stem and leafy parts separate.

Cut half of an onion into large chips, separating the layers.

Cut the bell pepper into bite-sized pieces.

Rinse the shrimp with cold water and pat dry.

Marinate the shrimp with salt, sugar, white pepper powder, corn starch, and a little bit of water, then mix in sesame oil.

Mix corn starch with cold water until dissolved.

Heat oil in a pan over medium high heat and add onion and bell pepper, pan fry for 20 seconds.

Season with a tiny bit of sugar and salt, then stir fry for about 90 seconds, remove from pan.

Add more oil if needed, add ginger to the oil and allow to sizzle briefly.

Add shrimp to the pan, pan fry until the bottom is golden brown, then turn to cook the other side.

Add minced garlic and the stem part of the green onion, stir fry briefly.

Add rice wine (if using), toss to let alcohol evaporate.

Season with oyster sauce, soy sauce, and dark soy sauce, stir fry until shrimp are evenly colored.

Add corn starch and water mixture, stir to combine, allow to boil and thicken into a sauce.

Add the onion and bell pepper back to the pan with leafy part of green onion, sesame oil, and black pepper.

Toss everything to mix evenly and serve with rice or noodles.
