Whole recipe (8 servings): 1200 kcal
- 2 tablespoons neutral cooking oil
- 1.75 oz chopped garlic, approximately 1 head
- 4 oz chopped shallots, approximately 1 cup
- 4.9 oz palm sugar, roughly chopped
- 1/2 cup fish sauce
- 3/4–1 cup tamarind paste, adjusted to taste
- Chilli flakes, to taste, optional
Method
9 steps- Heat the oil in a medium saucepan over medium-high heat.
- Add the garlic and shallots and sauté for 5–8 minutes, until soft and translucent. Remove them from the saucepan and set aside.
- Return the saucepan to medium heat. Add the palm sugar and cook until melted, pressing any firm pieces to help them dissolve.
- Continue cooking briefly until the sugar becomes a slightly darker caramel colour, taking care not to burn it.
- Turn off the heat and carefully add the tamarind paste. The mixture will bubble and the sugar may temporarily harden.
- Return the saucepan to low heat. Add the fish sauce and stir until the sugar is mostly dissolved.
- Return the garlic and shallots to the saucepan. Add chilli flakes, if using, then remove from the heat and allow the sauce to cool.
- Measure the finished sauce and divide its volume by eight to determine the amount required for each serving.
- When preparing Pad Thai, use one portion of sauce plus 1½ tablespoons water per serving.
