Ingredients

  • 4 large eggs
  • a pinch of salt
  • 1/2 teaspoon of cream of tartar
  • 1 cup of super fine sugar (or granulated sugar blitzed in a food processor)
  • 1 teaspoon and a half of cornstarch

Method

  1. Set your oven to 300°F (150°C).
  2. Separate four large eggs, placing the whites into a small bowl and the yolks into another container.
  3. Add a pinch of salt and 1/2 teaspoon of cream of tartar to the egg whites.
  4. Mix on medium low for 1-2 minutes until the whites start to froth.
  5. Gradually add one spoonful of super fine sugar at a time, gently sprinkling into the egg whites while mixing, until stiff, glossy peaks form.
  6. Sift in 1.5 teaspoons of cornstarch and fold gently into the meringue.
  7. Shape the meringue into a circle on a baking sheet, creating a slight nest in the center.
  8. Bake in the oven at 300°F, then immediately reduce temperature to 250°F and bake for 1 to 1.15 hours until the meringue is light cream color, dry to touch, and hard on the outside.
  9. Turn off the oven and leave the meringue inside for 3 hours to cool slowly.
