- 4 large eggs
- a pinch of salt
- 1/2 teaspoon of cream of tartar
- 1 cup of super fine sugar (or granulated sugar blitzed in a food processor)
- 1 teaspoon and a half of cornstarch
Method
- Set your oven to 300°F (150°C).
- Separate four large eggs, placing the whites into a small bowl and the yolks into another container.
- Add a pinch of salt and 1/2 teaspoon of cream of tartar to the egg whites.
- Mix on medium low for 1-2 minutes until the whites start to froth.
- Gradually add one spoonful of super fine sugar at a time, gently sprinkling into the egg whites while mixing, until stiff, glossy peaks form.
- Sift in 1.5 teaspoons of cornstarch and fold gently into the meringue.
- Shape the meringue into a circle on a baking sheet, creating a slight nest in the center.
- Bake in the oven at 300°F, then immediately reduce temperature to 250°F and bake for 1 to 1.15 hours until the meringue is light cream color, dry to touch, and hard on the outside.
- Turn off the oven and leave the meringue inside for 3 hours to cool slowly.
