Ingredients

  • 400-500g ground meat
  • 1 onion
  • 1/2 red bell pepper
  • 1/2 bunch parsley or coriander
  • 1 tbsp tomato paste
  • 1 garlic clove
  • 1 tsp paprika
  • 4 tbsp oil
  • Salt, pepper, cumin
  • Grated cheese
  • Butter for brushing edges
  • 400g flour
  • 1 tbsp dry yeast or 20g fresh yeast
  • 4 tbsp olive oil
  • 1 tbsp sugar
  • 1 tsp salt
  • 250-280ml water

Method

  1. Mix flour, yeast, sugar, salt, olive oil, and water to form dough.
  2. Let dough rise until doubled in size.
  3. Prepare filling by sautéing onion, garlic, bell pepper, and ground meat with tomato paste, paprika, salt, pepper, and cumin.
  4. Add chopped parsley or coriander to filling.
  5. Divide dough and roll into elongated shapes.
  6. Place filling on dough and sprinkle grated cheese on top.
  7. Fold edges and brush with butter.
  8. Bake until golden and cheese is gratinéed.
