  • 12 pork sausages
  • 24 rashes of streaky bacon
  • 1 sprig of rosemary
  • 2 sage leaves
  • 2 tablespoons or 40 g honey
  • a pinch of salt
  • ground white pepper

Method

9 steps
  1. Lay out two rashes of streaky bacon slightly overlapping, place a sage leaf in there, add a sausage, and gently roll it up. Repeat for four sausages with sage leaves, four with rosemary sprigs, and four with thyme (if used).
  2. Place the bacon-wrapped sausages onto a baking tray lined with parchment paper.
  3. Preheat oven to 200°C (400°F). Bake the sausages for 15 minutes until the bacon starts browning.
  4. While baking, finely chop the rosemary, sage, and thyme leaves, ensuring no large leaves or stems remain.
  5. Add the chopped herbs to a bowl, then mix in 2 tablespoons (40 g) honey, a pinch of salt, and some ground white pepper until well combined.
  6. Remove the baked sausages from the oven and place them on a heat-resistant surface.
  7. Using a pastry brush, coat each sausage with the honey glaze, flipping them if desired.
  8. Return the glazed sausages to the oven and bake for an additional 6 to 7 minutes until the bacon is caramelized and the sausages are cooked through.
  9. Let the sausages sit for about 5 minutes, then serve on a platter or in bowls, stacked high.
