Ingredients

9 ingredients
  • 1 kg Paris Piper potatoes
  • onions
  • salt
  • pepper
  • three quarters of a pot of cream
  • 2-3 anchovies
  • garlic
  • quarter of a nutmeg
  • parmesan

Method

13 steps
  1. Use a food processor to slice the potatoes and onions.
  2. Place the sliced potatoes and onions in a tray.
  3. Put a kettle of water on to boil.
  4. Add a pinch of salt and pepper to the tray.
  5. Pour three quarters of a pot of cream over the potatoes and onions.
  6. Add 2-3 anchovies, breaking them up with your hand.
  7. Squash in a garlic clove without peeling.
  8. Add a quarter of a nutmeg.
  9. Sprinkle with parmesan.
  10. Cover the tray with tinfoil and turn the heat down.
  11. Cook for about 6 minutes on the hob.
  12. Remove the tinfoil, add extra parmesan on top.
  13. Transfer the tray to the oven to gratinate until golden and bubbly.

Helpful tips

  • Use a food processor to slice potatoes and onions quickly.
  • Break up anchovies with your hand to distribute evenly.
  • Cover with tinfoil to cook on the hob, then gratinate in the oven for a golden top.
