- 900 g potatoes, peeled and cut into chunks
- 1 head of cabbage or a bunch of kale, roughly chopped
- 1 large onion, finely chopped
- 60 g butter, divided
- 120 ml milk or cream
- Salt and pepper, to taste
- 200 g shredded cheddar cheese (or any strong, mature cheese of your preference)
- 3 green onions, finely chopped
Method
10 steps- Boil the peeled and chopped potatoes in water until tender.
- Infuse the milk with finely chopped onions by adding them to a pan with some milk and heating gently.
- Sauté the finely chopped onions in a pan with some butter and pepper until softened.
- Add sliced cabbage or kale to the onions and cook until slightly softened but still textured.
- Drain the cooked potatoes and shake off excess moisture by returning them to the pan over low heat.
- Mash the potatoes with the infused milk and butter, leaving some lumps for texture.
- Mix in about half of the cooked cabbage and onions into the mashed potatoes.
- Layer the mashed potatoes and cabbage mixture in an 8x8 inch dish, adding a layer of cheese and more cabbage on top.
- Sprinkle additional cheese and black pepper over the top layer.
- Bake in an oven preheated to 180°C (360°F) for 15-20 minutes until the top is golden and crispy.
