Bacon, shallot and chilli are cooked in a simple tomato sauce, then tossed with pasta, Pecorino Romano and parsley.

Ingredients
10 ingredients- 100 g (4 oz) of bacon
- 1 shallot
- 500 ml (2 cups) of pulp or puree of tomato
- Salt
- Pepper
- Chilli
- 250 g (9 oz) of pasta
- Pecorino Romano cheese
- Parsley
- Olive oil
Method
8 steps- Cook the bacon until golden brown.
- Add shallot and brown for a few minutes.
- Add tomato pulp or puree.
- Season with salt, pepper, and chilli.
- Cook and withdraw for 10 minutes over low heat.
- Meanwhile, cook the pasta in salted boiling water until al dente. Reserve a little pasta water, then drain.
- Add the drained pasta to the tomato sauce and toss well, adding a splash of reserved pasta water if needed. Remove from the heat and stir in Pecorino Romano and parsley.
- Drizzle with olive oil before serving.

Helpful tips
- Reserve a little pasta water before draining so the sauce can be loosened if needed.
- Cook the pasta until al dente before tossing it with the sauce.
- Stir in the Pecorino after removing the pan from direct heat.

Storage
