  • 100 g (4 oz) of bacon
  • 1 shallot
  • 500 ml (2 cups) of pulp or puree of tomato
  • Salt
  • Pepper
  • Chilli
  • 250 g (9 oz) of pasta
  • Pecorino Romano cheese
  • Parsley
  • Olive oil

Method

8 steps
  1. Cook the bacon until golden brown.
  2. Add shallot and brown for a few minutes.
  3. Add tomato pulp or puree.
  4. Season with salt, pepper, and chilli.
  5. Cook and withdraw for 10 minutes over low heat.
  6. Meanwhile, cook the pasta in salted boiling water until al dente. Reserve a little pasta water, then drain.
  7. Add the drained pasta to the tomato sauce and toss well, adding a splash of reserved pasta water if needed. Remove from the heat and stir in Pecorino Romano and parsley.
  8. Drizzle with olive oil before serving.

Recipe notes

Helpful tips

  • Reserve a little pasta water before draining so the sauce can be loosened if needed.
  • Cook the pasta until al dente before tossing it with the sauce.
  • Stir in the Pecorino after removing the pan from direct heat.

Storage
