13 ingredients- Vegetable oil, for frying
- 1½ cups (180 g) all-purpose flour
- 3 tablespoons granulated sugar
- 2½ teaspoons baking powder
- 1 teaspoon salt
- ½ teaspoon ground cinnamon
- ¾ cup (180 ml) whole milk
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 large apples (about 1 lb/450 g), peeled, cored and diced
- 2 cups (240 g) powdered sugar
- 3–4 tablespoons whole milk, for the glaze
- ½ teaspoon vanilla extract, for the glaze
Method
11 steps- Fill a large pot or Dutch oven with 1½ inches of vegetable oil. Attach a deep-fry thermometer and heat the oil over medium-high heat to 350°F (175°C).
- Line a rimmed baking sheet with paper towels and place a wire rack on top.
- Whisk the flour, granulated sugar, baking powder, salt and cinnamon together in a large bowl.
- In a separate bowl, whisk together ¾ cup milk, the eggs and 2 teaspoons vanilla.
- Pour the wet ingredients into the dry ingredients and fold until only a few streaks of flour remain.
- Fold in the diced apples until evenly coated and no dry flour remains.
- Working in batches, carefully drop approximately ¼ cup batter per fritter into the hot oil. Do not overcrowd the pot.
- Fry for about 2 minutes per side, until deeply golden and cooked through. Maintain the oil temperature near 350°F (175°C).
- Transfer the fritters to the prepared wire rack. Allow the oil to return to temperature before frying the remaining batter.
- Whisk the powdered sugar, 3 tablespoons milk and ½ teaspoon vanilla together. Add the remaining milk as needed to make a thin glaze.
- Dip or drizzle the warm fritters with the glaze, then let them stand on the rack for 10 minutes before serving.

Storage
Fritters can be stored in the fridge for 5 days or on the counter for 2 days in sealed containers. Reheat in oven at 350°F for 10 minutes or in air fryer at 325°F for 4 minutes.
