  • 7 large apples, peeled and sliced (about 1.3 kg)
  • 125 ml water
  • 110 g caster sugar, plus extra to taste, for apples
  • finely grated zest of 1/2 lemon, optional
  • 190 g butter, softened
  • 165 g caster sugar, for sponge
  • 1 tsp vanilla extract
  • 3 large eggs
  • 225 g plain flour
  • 3 tsp baking powder
  • 1 pinch salt
  • 3 tbsp milk
  • 1 to 2 tbsp caster sugar, optional, for topping
  • icing sugar, optional, for dusting

Method

5 steps
  1. Stew the apples until soft but not watery.
  2. Make the sponge batter by mixing the ingredients until smooth.
  3. Pour the sponge batter over the stewed apples in a baking dish.
  4. Bake until the top is golden and the sponge is cooked through.
  5. Serve warm, optionally with cream or custard.
