  • CAULIFLOWER STEAKS
  • 1 cauliflower
  • 30 ml olive oil
  • 3 garlic cloves, crushed
  • Sweet paprika, to taste
  • Salt, to taste
  • Black pepper, to taste
  • Parmesan, grated, as needed
  • Cheese, grated, to taste
  • MILLET
  • 1 cup millet
  • 4 cups water
  • TAHINI SAUCE
  • 100 g tahini
  • Juice of 1/2 lemon
  • Ground cumin, to taste
  • Olive oil, as needed
  • Salt, to taste
  • Black pepper, to taste
  • SALAD
  • 1/4 cabbage, finely shredded
  • 1 carrot, grated
  • 1 cucumber, grated or finely sliced
  • Olive oil, for dressing

Method

17 steps
  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into thick steaks and place them on a lined baking tray.
  3. Mix the olive oil, crushed garlic, paprika, salt, black pepper and Parmesan.
  4. Brush the seasoned oil over both sides of the cauliflower steaks.
  5. Bake for 25 minutes.
  6. Rinse the millet thoroughly under cold water.
  7. Bring the four cups of water to the boil.
  8. Add the millet and cook for approximately 20 minutes, until the water has been absorbed.
  9. Remove the cauliflower from the oven.
  10. Sprinkle with grated cheese.
  11. Return to the oven for another 5 minutes.
  12. For the sauce, blend or whisk the tahini with lemon juice, cumin, olive oil, salt and black pepper.
  13. Combine the cabbage, carrot and cucumber.
  14. Season the salad and dress lightly with olive oil.
  15. Divide the millet and salad between four plates.
  16. Top with the roasted cauliflower steaks.
  17. Drizzle with tahini sauce and serve.

Helpful tips

  • Den Blumenkohl in dicke, gleichmäßige Scheiben schneiden.
  • Die Hirse kochen, bis das Wasser vollständig aufgenommen ist.
  • Den Salat und die Tahini-Sauce erst kurz vor dem Servieren hinzufügen.
