Ingredients

  • 3-4 medium size Bananas
  • 1/2 Cup | 100g Brown Sugar
  • 1/2 Cup | 100g Granulated Sugar
  • 1/2 Cup | 110g unsalted Butter, melted
  • 2 large Eggs
  • 1 Teaspoon Vanilla Essence
  • 1/2 Cup | 130g Greek Yogurt
  • 1 1/2 Cup | 180g All Purpose Flour
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 3/4 Cup | 140g mini chocolate chips

Equipment

  • Loaf tin
  • Parchment paper
  • Mixing bowls
  • Electric mixer or blender
  • Sieve
  • Spatula

Method

  1. Mash the Ripe Bananas with a fork first. Then blend them using an electric blender till smooth.
  2. Mix Brown Sugar and White Sugar with melted and cooled butter with a blender till the sugars are well dissolved.
  3. Mix the Eggs and Vanilla Essence. Beat well. Add the Greek Yogurt and mashed bananas. Mix.
  4. Sift together the dry ingredients (flour, baking soda, salt) into the wet ingredients. Mix well.
  5. Gently fold in the chocolate chips into the batter.
  6. Grease a loaf tin with a few drops of oil and line with parchment paper with long edges. Even out the top surface with the back of a spoon or a spatula. Sprinkle with a few chocolate chips.
  7. Bake at 180°C for 40-45 minutes or until a toothpick inserted in the center comes out clean. Let it cool completely before removing from the tin. Slight cracks are normal.
  8. Brush the warm cake with melted butter. Slice and serve hot or microwave for a few seconds to reheat.

Helpful tips

  • Let the melted butter cool before mixing it with the eggs.
  • Fold in the chocolate chips gently.
  • Cool the cake fully before lifting it from the lined tin.

Storage

Store the fully cooled cake in a covered container.
