Ingredients
- 90g soft butter
- 20g sugar
- pinch of salt
- vanillin or vanilla sugar
- 3 egg yolks
- 140g flour
- 1/2 tsp baking powder
- 100g frozen raspberries
- 10g sugar
- 5g cornstarch
- 3 egg whites
- pinch of salt
- 1 tsp lemon juice
- vanillin or vanilla sugar
- 140g powdered sugar
Method

Mix butter, sugar, salt, and vanilla sugar until smooth.

Add egg yolks and mix until smooth.

Add flour and baking powder, knead into a soft sticky dough.

Wrap dough in cling film and freeze for 30 minutes.

Cook raspberries, sugar, and cornstarch on medium heat until thickened.

Cover raspberry filling with cling film and let cool.

Cut dough into 7 cm diameter pieces.

Gather remaining dough into a ball.

Beat egg whites with salt, lemon juice, and vanilla sugar until light foam forms.

Gradually add powdered sugar while beating.

Beat until stiff peaks form.

Bake cookies at 150C (302F) for about 35 minutes.
