  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 (14.75 ounce can) creamed corn
  • 1 (15 ounce can) whole kernel corn (drained)
  • 3/4 cup sour cream
  • 8 tablespoons salted butter (melted)
  • 2 large eggs (lightly beaten)
  • 2 tablespoons minced jalapeño (about 1 jalapeno)
  • 1 pinch salt
  • 1 pinch black pepper

Method

5 steps
  1. Preheat the oven to 325F. Grease a 9x9 baking dish.
  2. Mix flour, corn meal, sugar and baking powder together.
  3. Stir in the drained can of corn, can of creamed corn, sour cream, melted butter, eggs and the finely chopped jalapenos. Give it just a pinch of salt and pepper.
  4. Mix all the ingredients in a bowl till well combined.
  5. Pour the batter into the casserole dish and bake for 50-55 minutes or until the center is set and does not jiggle.
