Ingredients
- 2 eggs
- 1 pinch of salt
- 100 g of sugar
- 80 g of wheat flour
- 30 g of cocoa powder
- 1 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 30 g of melted butter
- 400 g of milk chocolate
- 250 g of fresh or UHT cream
- 80 g of butter
- 350 g of melted and tempered white chocolate
- Fat-soluble dye for chocolate
- 150 g of white chocolate
- Pearlescent powder
- Optional gold powder
Method
- Prepare the chocolate batter by mixing eggs, salt, sugar, flour, cocoa, baking powder, baking soda, and melted butter.
- Bake the batter as instructed until ready.
- Make the milk chocolate ganache by heating cream and mixing with milk chocolate and butter until smooth.
- Melt and temper the white chocolate for the shell.
- Use fat-soluble dye to color the white chocolate as desired.
- Mold the chocolate shell in a silicone heart shape and let it harden.
- Assemble the fine dessert by filling with ganache and closing with the chocolate shell.
- Decorate with melted white chocolate in a silicone flower mold and apply pearlescent and gold powder if desired.
