- 2 eggs
- 3/4 cup sugar
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 4 oz crushed pineapple (drained slightly, not dry)
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon powder
- 1 cup finely grated carrots
- 1/2 cup raisins
- 1/4 cup desiccated coconut
Method

Preheat oven to 180°C.

Mix eggs and sugar until slightly pale and combined.

Add vegetable oil and vanilla extract, mix until smooth.

Stir in crushed pineapple.

Sift flour, baking powder, baking soda, and cinnamon into the bowl.

Gently fold until just combined, avoiding overmixing.

Add grated carrots and desiccated coconut, fold gently until evenly distributed.

Fill cupcake liners 3/4 full or pour batter into cake tin.

Bake cupcakes for 20-25 minutes or whole cake for 50-60 minutes.
