  • [Dough] 450–500g wheat flour
  • [Dough] 2 tbsp sugar
  • [Dough] 13g fresh yeast
  • [Dough] 125ml warm water
  • [Dough] 125ml warm milk
  • [Dough] 1 egg plus 1 egg yolk
  • [Dough] 5–6g salt
  • [Dough] 50g butter
  • [Chocolate layer] 3 tbsp cocoa powder
  • [Chocolate layer] 10ml vegetable oil
  • [Coconut filling] 120g desiccated coconut
  • [Coconut filling] 10g vanilla sugar
  • [Coconut filling] 70g icing sugar
  • [Coconut filling] 100g butter
  • [Glaze] 60ml milk

Method

9 steps
  1. Dissolve the fresh yeast and sugar in the warm water and milk.
  2. Add the egg, egg yolk, flour, salt and butter. Knead until smooth and elastic.
  3. Cover and leave the dough to rise for 60 minutes.
  4. Prepare the chocolate mixture with the cocoa and oil.
  5. Mix the coconut, vanilla sugar, icing sugar and softened butter to make the filling.
  6. Roll out and assemble the dough with the chocolate and coconut layers, then shape it into a roll.
  7. Place the shaped roll on a lined baking tray and brush with milk.
  8. Bake at 180°C for 35–40 minutes until risen and golden.
  9. Cool before slicing.

Storage

Store the cooled roll in an airtight container for up to 2 days. Refrigerate during warm weather because of the butter-rich filling.
