  • 450 g All purpose Flour
  • 130 g Butter
  • 100 g shortening
  • 75 g caster sugar
  • 1 egg
  • 3 tbsp cold water
  • 1 tsp Apple Cider Vinegar
  • 1 tbsp mincemeat

Method

13 steps
  1. In a bowl, combine 450 g all-purpose flour, 130 g butter, and 100 g shortening. Rub into breadcrumb texture.
  2. Add 75 g caster sugar to the mixture.
  3. Crack in 1 egg and add about 3 tablespoons of cold water. Mix until the dough starts to come together.
  4. Add 1 teaspoon of apple cider vinegar and mix well.
  5. Let the dough rest for about 10 minutes.
  6. Divide the pastry into one-third and two-thirds portions.
  7. Roll out the larger portion and cut out circles about 4 inches in diameter.
  8. Line muffin tin with pastry circles, pressing gently into the tin.
  9. Fill each pastry case with about 1 tablespoon of mincemeat, filling about three-quarters full.
  10. Roll out the remaining pastry for the lids and cut out circles of the same size.
  11. Dampen the edges of the pastry in the muffin tin with water, then place the lids on top, pressing gently to seal.
  12. Brush the tops with egg white, sprinkle with caster sugar, and cut two small vent holes in each lid.
  13. Bake in a preheated oven at 160 degrees Celsius for about 20 minutes until golden.
