  • 750 ml red wine
  • cardamom pods
  • dried flower buds
  • star anis
  • cinnamon stick
  • lemongrass
  • orange zest twist
  • orange, cut into wedges
  • 1 tbsp Demerara sugar
  • stem ginger
  • 2 tbsp ginger syrup
  • Brazil nuts
  • almonds
  • walnuts
  • hazelnuts
  • pistachios
  • a couple of pinches of salt
  • half a teaspoon cayenne pepper
  • half a teaspoon paprika
  • sprig of rosemary

Method

8 steps
  1. Pour red wine into a pan and gently heat.
  2. Add orange zest twist, orange wedges, a tablespoon of Demerara sugar, stem ginger, and two tablespoons of ginger syrup to the wine.
  3. Heat the wine gently for four to five minutes to infuse flavors, avoiding boiling.
  4. In a separate pan, add Brazil nuts, almonds, walnuts, hazelnuts, and pistachios.
  5. Add a couple of pinches of salt, lightly toast the nuts until they start to color.
  6. Sprinkle half a teaspoon of cayenne pepper and half a teaspoon of paprika over the nuts.
  7. Add a sprig of rosemary and toss the nuts to coat thoroughly.
  8. Serve the mulled wine warm with the spiced nuts.
