  • 6 tablespoons or 90 ml of water
  • 1 stick of cinnamon
  • about a dozen cloves
  • 2 slices of fresh ginger
  • 1/4 cup plus 3 tbsp or 85 g of sugar
  • 2 and 1/3 cup or 1 imperial pint of good port
  • optional strip or two of orange peel

Method

6 steps
  1. Get a medium saucepan and add the water and the sugar and stir to dissolve the sugar.
  2. Gently hit the ginger slices with a hammer and add along with the cinnamon and cloves to the water and sugar mixture.
  3. Set over low heat and warm slowly to infuse spices into the syrup.
  4. Add the port wine and orange peel if using.
  5. Let the mixture come to a gentle boil.
  6. Remove from heat and serve immediately.
