Ingredients
- 300 ml milk ((1 1/4 cups))
- 2 tablespoons cornstarch
- 1 egg yolk egg yolk
- 3 tablespoons sugar
- 1 teaspoon vanilla extract
- 300 g all-purpose flour ((2 1/2 cups))
- 2 teaspoons baking powder
- 100 g powdered sugar ((3/4 cup))
- 100 ml vegetable oil ((7 tablespoons))
- 2 pieces eggs
- 1 piece lemon zest
- 80 g peaches ((1/3 cup, sliced))
Method
- Dissolve cornstarch in milk.
- In a saucepan, combine milk, egg yolk, sugar, and vanilla extract. Heat and stir until thickened.
- Cover the cream with plastic wrap to avoid skin formation.
- In a bowl, mix flour, baking powder, powdered sugar, vegetable oil, eggs, and lemon zest until smooth.
- Divide the dough in half and chill for 30 minutes.
- Roll out the first half of the dough and place on a baking sheet lined with parchment paper.
- Fill a piping bag with the cream and spread it over the dough.
- Place sliced peaches on top.
- Grate the remaining dough over the peaches as a crumble.
- Bake at 200°C (400°F) for 20 minutes.
- Dust with powdered sugar before serving.
