  • 375 g self-raising flour
  • 25 g red Leicester cheese, grated
  • 250 ml full fat milk
  • 3 tbsp vegetable oil
  • 1 egg
  • salt
  • sausages

Method

8 steps
  1. Mix 375 g self-raising flour with 25 g grated red Leicester cheese and a pinch of salt.
  2. Stir in 250 ml full fat milk, 3 tablespoons vegetable oil, and 1 egg until a sticky, tender dough forms. Add more flour if necessary.
  3. Pat or roll out the dough into a rough rectangle.
  4. Cut the dough into strips suitable to wrap around sausages.
  5. Place a sausage on the edge of a dough strip and roll up to enclose it.
  6. Repeat with remaining sausages and dough strips.
  7. Brush the assembled pigs in blankets with beaten egg mixed with a pinch of salt.
  8. Bake in a hot oven at 220°C for 10 to 15 minutes until golden.
