Whole recipe (12 servings): 2124 kcal

  • 320 g ready rolled puff pastry
  • 8-10 frankfurters or vegetarian hot dogs (around 350 g)
  • 1 beaten egg
  • 2 tbsp soy milk
  • 2 tsp flavourless oil
  • dash of maple syrup
  • 100 g wholegrain mustard
  • 100 g Dijon mustard
  • 2 tbsp sour cream

Method

7 steps
  1. Preheat your oven to 220°C / 430°F (200°C / 390°F fan). Cover a large baking tray, or two medium trays, with greaseproof paper.
  2. Unwrap the puff pastry and roll it out slightly, extending the long side. Cut into quarters then cut each quarter in half lengthways to make 8 strips of pastry.
  3. Place 1 frankfurter at the edge of a pastry strip. Roll it up, pressing firmly along the seam to seal. Repeat with remaining sausages and pastry strips.
  4. Cut each roll into three or four pieces, depending on desired size, then place seam-side down on the baking tray.
  5. Brush the sausage rolls with the beaten egg (or vegan egg wash). Bake for 15-20 minutes until golden brown.
  6. For vegan egg wash, whisk together 2 tbsp soy milk, 2 tsp oil, and a dash of maple syrup.
  7. For the mustard dipping sauce, mix 100 g wholegrain mustard, 100 g Dijon mustard, and 2 tbsp sour cream in a bowl.
