  • 1 (8 to 10 inch) flour tortilla
  • 1 teaspoon butter, very light coating
  • 1/4 cup shredded sharp cheddar cheese
  • 1/4 cup shredded pepper jack cheese
  • Cooked chicken, optional, to taste
  • Black beans, optional, to taste

Method

9 steps
  1. Butter the outside of the tortilla with a very light coating of butter.
  2. Heat a cast iron skillet over medium to medium-high heat.
  3. Place the tortilla in the skillet and heat it up together.
  4. Spread cheese all the way around the tortilla, on half for fillings.
  5. Add fillings such as cooked chicken and black beans on half of the tortilla.
  6. Cook until the cheese is melted and the outside is toasted, about a few minutes.
  7. Flip the quesadilla with the cheesy side over the filled side, cook until crusty and golden, about another minute.
  8. Cut the quesadilla into triangles, typically into three pieces for an 8-inch or smaller tortilla.
  9. Serve with toppings like sour cream, guacamole, pico de gallo, or last-minute toppings like olives, jalapenos, or lettuce added before flipping.
