Method

  1. Combine the turkey mince with coriander, Thai curry paste and the remaining meatball seasonings shown in the source.
  2. Shape into small golf-ball-sized meatballs.
  3. Brown the meatballs in a frying pan, oven or air fryer until coloured and about 80% cooked.
  4. Slice the spring onions and red pepper.
  5. Fry the spring onions and red pepper in the same pan.
  6. Add the light coconut milk, additional Thai curry paste and peanut butter.
  7. Return the meatballs to the pan.
  8. Reduce the heat and simmer for about 10 minutes, until the sauce thickens and the meatballs are fully cooked.
  9. Serve with rice.
