Ingredients

  • 1 medium potato
  • 1 carrot
  • 1 onion
  • 6 to 7 spring onions
  • 3/4 cup (110 grams) chickpea flour
  • 1/3 cup (80 ml) plant based milk
  • 1/2 tsp salt
  • 1/2 tsp ground cumin
  • black pepper to taste
  • olive oil

Method

    Grate the potato, carrot, and onion.

    Chop the spring onions finely.

  3. 3

    Combine the grated vegetables and spring onions in a bowl.

  4. 4

    Add chickpea flour, plant based milk, salt, ground cumin, and black pepper to the vegetables.

    Mix everything well to form a batter.

    Heat olive oil in a frying pan over medium heat.

    Spoon the batter into the pan and flatten to form fritters.

    Cook each fritter for a few minutes on each side until golden brown and cooked through.

    Remove from the pan and drain excess oil on paper towels.
