- 50 g sugar (vanilla sauce)
- 1 tsp vanilla extract (vanilla sauce)

Method
23 steps- Preheat the oven to 170°C (338°F).
- Grease and line a 22–24 cm springform cake tin.
- Whisk the 2 eggs, salt and 100 g sugar until pale and slightly thickened.
- Add the warm milk, vegetable oil and melted butter.
- Sift together the flour and baking powder.
- Fold the dry ingredients into the egg mixture.
- Peel and dice the two large apples.
- Fold the diced apples into the batter.
- Spread the batter evenly in the prepared tin.
- For the quark topping, whisk together the quark, 70 g sugar, 3 eggs, sour cream and cornflour until smooth.
- Carefully pour the quark mixture over the apple batter.
- Thinly slice the remaining apple and arrange it over the top.
- Bake for approximately 50–55 minutes, until the centre is set with only a slight wobble.
- If the cake browns too quickly, cover it loosely with foil near the end of baking.
- Leave the cake to cool in the tin for at least 20 minutes.
- For the vanilla sauce, place the milk, cream, salt and vanilla in a saucepan.
- Heat until steaming but not boiling.
- Whisk the egg yolks with the 50 g sugar in a heatproof bowl.
- Gradually whisk the hot milk mixture into the yolks.
- Return everything to the saucepan.
- Cook over low heat, stirring constantly, until the sauce lightly coats the back of a spoon.
- Do not allow the custard to boil.
- Serve the apple and quark cake warm or cool with the vanilla sauce.
