  • 2 tbsp sugar
  • 20 g fresh yeast
  • 250 ml warm milk
  • 1 egg
  • 1 egg yolk
  • 80 g butter
  • 5-6 g salt
  • 2 apples
  • Juice of half a lemon
  • 150 g all-purpose flour (for crumble)
  • 100 g sugar (for crumble)
  • 10 g cinnamon
  • 8 g vanilla sugar
  • 80 g butter (for crumble)

Method

  1. 1

    Knead the dough with flour, sugar, yeast, warm milk, egg, egg yolk, butter and salt.

    Let the dough rest for 60 minutes.

    Prepare the filling with apples and lemon juice.

  4. 4

    Shape the buns and fill them with the apple filling.

  5. 5

    Make the crumble with flour, sugar, cinnamon, vanilla sugar and butter.

    Brush the buns with the egg-milk mixture.

  7. 7

    Sprinkle the crumble on the buns.

  8. 8

    Bake the buns at 180 °C for 25-30 minutes.
