  • 3 zucchini, grated
  • Salt, to taste
  • 2 carrots, grated
  • Green onions, finely sliced
  • Fresh dill and parsley, chopped
  • 2 garlic cloves, divided
  • 2 eggs
  • Black pepper, to taste
  • Paprika, to taste
  • Italian seasoning, to taste
  • 60 g (1/2 cup) Parmesan, finely grated
  • 4 tablespoons breadcrumbs
  • Olive oil, for brushing
  • Shredded cheese, for topping
  • 1 tablespoon mayonnaise
  • 1 tablespoon Greek yogurt or sour cream
  • Juice of 1/2 lemon

Method

  1. Preheat the oven to 200°C (400°F) and line a baking tray.
  2. Grate the zucchini, sprinkle with salt and leave for 10 minutes.
  3. Grate the carrots and combine them with the green onions, dill and parsley.
  4. Mince one garlic clove and add it to the vegetables.
  5. Squeeze as much liquid as possible from the zucchini and add it to the bowl.
  6. Add the eggs, black pepper, paprika and Italian seasoning and mix well.
  7. Add the Parmesan and breadcrumbs and mix until the mixture holds together.
  8. Form the mixture into small balls and arrange them on the prepared tray.
  9. Brush the veggie bites lightly with olive oil.
  10. Bake for 30 minutes at 200°C (400°F).
  11. For the sauce, combine the mayonnaise, Greek yogurt or sour cream, lemon juice, chopped dill and the remaining grated garlic clove.
  12. Remove the veggie bites from the oven and sprinkle them with shredded cheese.
  13. Bake for another 5 to 10 minutes, until the cheese is melted and golden.
  14. Serve the veggie bites warm with the creamy dill sauce.
