Baked Zucchini Veggie Bites

- 3 zucchinis
- Salt
- 2 carrots
- Green onions
- Dill & parsley
- 2 garlic cloves
- 2 eggs
- Black pepper
- Paprika
- Italian seasoning
- 60 g (½ cup) grated parmesan
- 4 tbsp breadcrumbs
- Olive oil
- Shredded cheese (for topping)
- 1 tbsp mayonnaise
- 1 tbsp Greek yogurt or sour cream
- Juice of ½ lemon

Grate zucchini, sprinkle with salt and let sit for 10 minutes.

Grate carrots and mix with chopped green onions.

Add finely chopped dill and parsley.

Add minced garlic.

Squeeze excess liquid from zucchini and add to the veggie mix.

Add eggs, black pepper, paprika and Italian seasoning, then mix well.

Add finely grated parmesan and breadcrumbs, then mix again.

Form small balls from the mixture.

Brush the balls with olive oil and place on a baking tray.

Bake for 30 minutes at 400°F (200°C).

Mix mayonnaise, Greek yogurt or sour cream, chopped dill, grated garlic clove, and lemon juice to make the sauce.
