Ingredients
- 3 zucchinis
- Salt
- 2 carrots
- Green onions
- Dill & parsley
- 2 garlic cloves
- 2 eggs
- Black pepper
- Paprika
- Italian seasoning
- 60 g (½ cup) grated parmesan
- 4 tbsp breadcrumbs
- Olive oil
- Shredded cheese (for topping)
- 1 tbsp mayonnaise
- 1 tbsp Greek yogurt or sour cream
- Juice of ½ lemon
Method
- Grate zucchini, sprinkle with salt and let sit for 10 minutes.
- Grate carrots and mix with chopped green onions.
- Add finely chopped dill and parsley.
- Add minced garlic.
- Squeeze excess liquid from zucchini and add to the veggie mix.
- Add eggs, black pepper, paprika and Italian seasoning, then mix well.
- Add finely grated parmesan and breadcrumbs, then mix again.
- Form small balls from the mixture.
- Brush the balls with olive oil and place on a baking tray.
- Bake for 30 minutes at 400°F (200°C).
- Mix mayonnaise, Greek yogurt or sour cream, chopped dill, grated garlic clove, and lemon juice to make the sauce.
- Remove veggie bites from the oven.
- Sprinkle shredded cheese on top of the veggie bites.
- Bake for another 5–10 minutes at 400°F (200°C).
