  • 1 head broccoli
  • 1 carrot, grated
  • 2 green onions, finely sliced
  • Fresh parsley, finely chopped
  • 2 garlic cloves, divided
  • 2 eggs
  • 150 g mozzarella cheese, grated
  • 2 tablespoons breadcrumbs
  • Salt, to taste
  • Olive oil, for brushing
  • 1 teaspoon mayonnaise
  • 1 tablespoon Greek yogurt or sour cream
  • 1 teaspoon mustard
  • 1 pickle, finely chopped
  • Fresh dill, finely chopped
  • Grated cheese, for topping

Method

11 steps
  1. Bring a saucepan of water to the boil.
  2. Add the broccoli and cook for 5 minutes.
  3. Drain and cool the broccoli under cold water, then chop it finely.
  4. Combine the broccoli, carrot, green onions, parsley, one minced garlic clove, eggs, mozzarella, breadcrumbs and salt.
  5. Shape the mixture into small balls and arrange them on a lined baking tray.
  6. Brush the broccoli balls lightly with olive oil.
  7. Bake at 180°C (350°F) for 25 minutes.
  8. Meanwhile, mix the mayonnaise, Greek yogurt or sour cream, mustard, pickle, dill and remaining minced garlic to make the sauce.
  9. Remove the broccoli balls from the oven and sprinkle them with grated cheese.
  10. Bake for another 5 to 10 minutes, until the cheese is melted and golden.
  11. Serve the broccoli and cheese balls with the creamy pickle sauce.
