  • For the filling:
  • 4 eggs
  • 1 onion
  • 1 red bell pepper
  • 1 carrot
  • 2 cloves garlic
  • 2 pickled cucumbers
  • 3 tablespoons mayonnaise
  • Fresh parsley, to taste
  • Vegetable oil, for cooking
  • Salt, to taste
  • Black pepper, to taste
  • Sweet paprika, to taste
  • For the meat rolls:
  • 450 g ground meat
  • 2 tablespoons tomato paste
  • 1 tablespoon mustard
  • 3 tablespoons flour
  • 100 g cheese
  • 80 g mozzarella
  • Olive oil, for greasing
  • For the glaze:
  • 2 tablespoons tomato paste
  • 20 ml soy sauce
  • 1 teaspoon mustard
  • 1 tablespoon olive oil
  • For the potato and mushroom side:
  • 3 potatoes
  • Butter, to taste
  • Mushrooms, to taste
  • 50 g Parmesan
  • Green onions, to garnish
  • Salt, to taste

Method

12 steps
  1. Cook the eggs until hard-boiled. Cool, peel and finely chop or grate them.
  2. Finely chop the onion, red bell pepper and carrot. Heat a little vegetable oil in a frying pan and sauté the vegetables until softened.
  3. Add the garlic and cook briefly. Remove the vegetables from the heat and allow them to cool.
  4. Combine the cooked vegetables with the eggs, pickled cucumbers, mayonnaise and chopped parsley. Season the filling with salt and black pepper.
  5. Place the ground meat in a bowl. Add the tomato paste, mustard, flour, salt, black pepper and sweet paprika, then mix until evenly combined.
  6. Divide the meat mixture into portions. Flatten each portion into a rectangle, place some vegetable and egg filling in the centre and add the cheese and mozzarella.
  7. Roll the meat around the filling and seal the edges securely. Arrange the rolls in a lightly oiled baking dish.
  8. Combine the tomato paste, soy sauce, mustard and olive oil for the glaze. Brush some of the glaze over the meat rolls.
  9. Bake the rolls until browned and the meat is completely cooked through. Brush with the remaining glaze near the end of baking.
  10. Meanwhile, peel and boil the potatoes in salted water until tender. Drain and mash them with butter and Parmesan.
  11. Slice and sauté the mushrooms in butter or oil until golden. Season to taste.
  12. Serve the glazed meat rolls with the mashed potatoes and mushrooms, then garnish with sliced green onions.

Additional tips

  • Contains egg, milk, soya, mustard and gluten. Check the soy-sauce label because formulations vary. Cook the centre of each ground-meat roll to a safe internal temperature of at least 71°C.
