Cook: 35 minutes

Ingredients

  • 1.5 cups Greek yogurt (375g)
  • 4 eggs
  • 3 tbsp maple syrup or agave
  • 2 tbsp oat flour or processed rolled oats
  • 1 cup blueberries, fresh or frozen (150g)

Method

  1. Preheat oven to 340°F (170°C).
  2. Grease or line an 8x8 inch (20x20cm) baking dish.
  3. In a large bowl, whisk Greek yogurt, eggs, sweetener, and oat flour until smooth.
  4. Fold in blueberries gently.
  5. Pour mixture into prepared baking dish.
  6. Bake for 30-35 minutes until top is set and edges are golden brown.
  7. Cool for 5 minutes before slicing.
  8. Serve warm or at room temperature.
