  • SEED CRACKERS
  • 1 cup flaxseed
  • 1/2 cup chia seeds
  • 500 ml water
  • 4 tbsp sesame seeds
  • 4 tbsp sunflower seeds
  • 2 tbsp pumpkin seeds
  • Salt, to taste
  • Sweet paprika, to taste
  • Turmeric, to taste
  • Oregano, to taste
  • 4 tbsp olive oil
  • AVOCADO AND EGG TOPPING
  • 1 hard-boiled egg yolk
  • 1/2 avocado
  • 2 tbsp grated Parmesan
  • 1 tbsp soft cheese
  • A little lemon juice
  • Black pepper, to taste
  • Chopped parsley, to taste
  • A little lightly salted red fish, to serve

Method

10 steps
  1. Combine the flaxseed, chia seeds and water in a large bowl.
  2. Add the sesame seeds, sunflower seeds, pumpkin seeds, salt, paprika, turmeric, oregano and olive oil. Mix thoroughly.
  3. Leave the seed mixture to stand for 15 minutes so it thickens.
  4. Line a large baking tray with parchment paper.
  5. Spread the mixture into a thin, even layer and score it into cracker shapes before baking.
  6. Bake at 180°C (350°F) for 25–30 minutes.
  7. Reduce the oven temperature to 150°C (300°F) and continue drying the crackers until firm and crisp. The creator does not specify an exact drying time, so check them frequently.
  8. Allow the crackers to cool completely before separating them along the scored lines.
  9. For the topping, mash the hard-boiled egg yolk with the avocado, Parmesan, soft cheese, lemon juice, black pepper and parsley.
  10. Spread the avocado mixture over the crackers and finish with pieces of lightly salted red fish.
