Ingredients

  • Chicken breast fillets (thinly pounded)
  • 1 cup All-purpose flour
  • 3 Eggs
  • 1 bunch of Fresh parsley (chopped)
  • 4 Garlic cloves (chopped)
  • 7 oz Breadcrumbs
  • 1.7 oz Parmesan cheese (grated)
  • 3.5 oz Marinara sauce
  • Ham slices (2 per cutlet)
  • Mozzarella cheese (sliced)
  • Dried oregano
  • Dried basil
  • Olive oil
  • Butter
  • Salt
  • Black pepper
  • Potatoes (for French fries)

Method

    Pound chicken fillets thin and season with salt and pepper.

    Dredge each cutlet in flour.

  3. 3

    Whisk 3 eggs with chopped parsley and garlic.

  4. 4

    Dip the floured meat into the egg mixture.

    Mix breadcrumbs with grated Parmesan and extra garlic.

    Coat the meat thoroughly with the breadcrumb mixture.

    Shallow fry in olive oil with a piece of butter for 2-3 minutes per side until golden brown.

    Transfer to a baking sheet lined with parchment paper.

    Mix marinara sauce with oregano and basil.

    Layer each cutlet with 2 slices of ham, marinara sauce, and mozzarella slices.

    Sprinkle with more oregano.

    Bake at 400°F (200°C) for 5 minutes until the cheese melts.

    Serve with French fries.
