- 1-2 handfuls walnuts
- juice of 1 lemon
- 1 cup fresh parsley
- 2 tbsp fresh oregano or 1 tsp dried
- 1 fresh chili or 1/2 tsp chili flakes
- 2-3 tbsp red wine vinegar or lemon juice
- 1/2 cup extra virgin olive oil

Preheat oven to 450°F (220°C).

Mix olive oil, paprika, cumin, turmeric, salt, and pepper. Brush both sides of cabbage wedges.

Place cabbage wedges and whole bell peppers on parchment-lined trays. Roast for 35-45 minutes, flipping cabbage once.

Peel peppers once cooled. Discard skins.

Blend roasted peppers with walnuts, lemon juice, vegan parmesan, salt, and pepper. Add water gradually until smooth.
