- 7 ounces (200g) mushrooms
- 5 ounces (150g) Emmental cheese
- 2 tablespoons ketchup
- 4 tablespoons soy sauce
- 1 teaspoon grain Dijon mustard
- 2 tablespoons honey
- 5 medium potatoes
- 1 bunch green onions
- 1 clove garlic
- 2 tablespoons Philadelphia cream cheese
- 2 ounces (60g) Parmesan cheese
- 1 teaspoon salt
- 1 teaspoon black pepper
- Olive oil
- Butter (1 stick or 120g total)
Method
- Preheat the oven to the appropriate temperature for meatloaf.
- In a large bowl, combine ground beef, eggs, salt, black pepper, paprika, grated onion, chopped parsley, shredded carrots, diced red and yellow bell peppers, chopped mushrooms, and Emmental cheese.
- Mix in ketchup, soy sauce, Dijon mustard, and honey until well combined.
- Form the meat mixture into a loaf shape and place it in a baking dish.
- Prepare the glaze by mixing together any leftover ketchup and honey, and brush it over the meatloaf.
- Bake in the preheated oven for the specified time or until the internal temperature reaches a safe level.
- While the meatloaf is baking, prepare the mashed potatoes by boiling peeled potatoes until soft.
- Mash the potatoes with cream cheese, Parmesan cheese, salt, and pepper until smooth and creamy.
- Serve the meatloaf with creamy mashed potatoes and your choice of roasted vegetables or salad.
