  • 2¼ cups all-purpose flour ((270g))
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ¾ cup unsalted butter (melted and cooled slightly (170g))
  • 1 cup packed light brown sugar ((220g))
  • ⅔ cup granulated sugar ((133g))
  • 2 large eggs (room temperature)
  • 1 tablespoon vanilla extract
  • 2 cups semi-sweet chocolate chips (divided (360g))

Method

  1. Preheat oven and line an 8x8 inch dish with parchment paper or foil.
  2. Whisk together 2¼ cups all-purpose flour, 1 tablespoon cornstarch, 1 teaspoon baking soda, and 1 teaspoon salt. Set aside.
  3. In a large bowl, combine ¾ cup melted butter, ⅔ cup granulated sugar, and 1 cup packed light brown sugar. Mix until a thick slurry forms.
  4. Add 1 tablespoon vanilla extract and 2 room temperature eggs to the butter and sugar mixture. Whisk until combined.
  5. Fold the dry ingredients into the wet mixture using a spatula until mostly incorporated.
  6. Add 2 cups semi-sweet chocolate chips and, optionally, chopped toasted nuts if desired, and fold to combine.
  7. Pour the batter into the prepared dish and bake for 30 minutes for a gooey center or an additional 5-10 minutes for a more set texture.
  8. Remove from oven and let set. Once cooled, lift out using the parchment paper and cut into bars.
