- Lightly grease a medium baking dish with olive oil.
- Heat the vegetable oil in a frying pan over medium heat.
- Add the onion, bell pepper and carrot and cook for 5–6 minutes, until softened.
- Add the garlic and cook for another 30 seconds.

- Combine the cooked vegetables with the eggs, pickled cucumbers, mayonnaise and parsley.
- Season the filling with salt and black pepper.
- Place the ground meat in a separate bowl.
- Add the tomato paste, mustard, flour, paprika, salt and black pepper and mix until evenly combined.
- Divide the meat mixture into four equal portions.
- Flatten each portion into a rectangle approximately 1cm thick.
- Place some filling down the centre of each rectangle and add some of the grated cheese and mozzarella.
- Fold and roll the meat around the filling, then pinch the seams and ends closed.
- Arrange the rolls seam-side down in the prepared baking dish.
- Mix the tomato paste, soy sauce, mustard and olive oil for the glaze.
- Brush half of the glaze over the meat rolls.

- Drain the potatoes and mash them with the butter and Parmesan.
- Season the mash with salt and black pepper.
- Sauté the sliced mushrooms in a little butter or oil for 6–8 minutes, until golden.
- Rest the cooked meat rolls for 5 minutes.
