  • 750g potatoes
  • 1 tbsp salt
  • 2 tbsp olive oil
  • 30-40g parmesan cheese
  • 2 tbsp corn starch or potato starch
  • 1/2 tbsp oregano
  • 1 tsp red pepper powder
  • 1 tsp minced garlic
  • 40g bread crumbs
  • 2.5 tbsp milk
  • 40g cheddar cheese
  • 5g butter
  • 1 tsp sriracha sauce

Method

13 steps
  1. Peel and cut potatoes into wedges.
  2. Soak potatoes in hot water with 1 tbsp salt for 20 minutes.
  3. Drain and dry potatoes with paper towel.
  4. Put potatoes in a plastic bag.
  5. Add olive oil, parmesan, starch, oregano, red pepper powder, salt, and minced garlic to the bag.
  6. Shake the bag to coat potatoes evenly.
  7. Add bread crumbs and shake gently.
  8. Place potatoes on parchment or silicone paper.
  9. Bake at 365°F (185°C) for 40-50 minutes.
  10. Check doneness with a toothpick.
  11. For cheese sauce, melt cheddar, butter, and milk in microwave for 30 seconds.
  12. Mix in sriracha sauce.
  13. Serve potatoes with cheese sauce.
